Kale Summer Salad with Goat Cheese

Maintaining a healthy lifestyle starts with what you eat. I have created the perfect summer salad that taste delicious, and is good for you.
Kale has so many nutritional benefits and is a nutrition superstar because it is filled with so many vitamins. One cup of kale has only 33 calories, so it is most certainly a healthy choice. This salad is perfect for after a workout, or for dinner after work! It is filled with mouthwatering flavors that will keep you coming back for more and is one of my favorite things to eat!
Kale Summer Salad with Goat Cheese
Ingredients
This recipe is easy and fun because there are only a few ingredients need to make this nutritious salad
Salad
4 cups kale (I like dino kale the best)
1 diced apple
¼ cup pomegranate seeds
½ cup crushed cashews
2 ounces goat cheese
Dressing
2 tablespoons fresh lemon juice
¼ cup olive oil
¼ teaspoon salt
¼ teaspoon black pepper
2 tablespoons red wine vinegar
1 teaspoon honey or sugar
Directions
First make your dressing by combining the ingredients above in a jar. Once the dressing is made, store it in the fridge to keep cool
After the dressing is made and put away, start by massaging your kale with olive oil. Once the kale is fully coated, put it in a large bowl and start adding your ingredients.
First, add the diced apples and the pomegranate seeds. Keep mixing it while you add ingredients, so it stays evenly coated.
Next add the crushed cashews and the goat cheese by sprinkling them over the top.
Grab the dressing that has been chilling in the fridge and pour it over the top \
Toss and you're done!
